
Recipe: Cinnamon Spiced Sweet Potato Pancakes

Try this clever, nutritious variation on an old favourite from nutritionist Madi Sheppard

Serves: 2
Time: 15 minutes
Ingredients
- 4 whole eggs
- 300g sweet potato
- 2 tbsp almond butter
- 1 cup blueberries
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon ground ginger
Method
- Roughly chop sweet potato
- Half fill a saucepan with water and bring to the boil
- Add sweet potato, cover and boil for 10-12 minutes
- Strain sweet potato, place in a bowl and mash with a fork
- When sweet potato has cooled a little, crack egg into the bowl and mix well. dd cinnamon, ginger and allspice and mix again
- Spray a little olive oil in a frypan and place over low-medium heat
- Scoop tablespoons of mixture into the pan and cook for 2-3 minutes either side or until golden brown
- Place almond butter in a saucepan over low heat until just melted
- Serve cinnamon spiced sweet potato pancakes with fresh blueberries and pour almond butter over the top
