Recipe: Cinnamon Spiced Sweet Potato Pancakes

Did somebody say… pancakes?

Try this clever, nutritious variation on an old favourite from nutritionist Madi Sheppard

Serves: 2
Time: 15 minutes

Ingredients

  • 4 whole eggs
  • 300g sweet potato
  • 2 tbsp almond butter
  • 1 cup blueberries
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon ground ginger

Method

  1. Roughly chop sweet potato
  2. Half fill a saucepan with water and bring to the boil
  3. Add sweet potato, cover and boil for 10-12 minutes
  4. Strain sweet potato, place in a bowl and mash with a fork
  5. When sweet potato has cooled a little, crack egg into the bowl and mix well. dd cinnamon, ginger and allspice and mix again
  6. Spray a little olive oil in a frypan and place over low-medium heat
  7. Scoop tablespoons of mixture into the pan and cook for 2-3 minutes either side or until golden brown
  8. Place almond butter in a saucepan over low heat until just melted
  9. Serve cinnamon spiced sweet potato pancakes with fresh blueberries and pour almond butter over the top
